Moruga-suklaajuustotorttu / Moruga Chocolate Cheesecake Tart

Moruga Scorpion - tuo vähän pelottava chili - pääsi todistamaan sopivansa myös makeaan ruoanlaittoon. Sen vähitellen hiipivä lämpö ja hyvin omintakeinen eksoottinen aromi sopii makkarakeitosta chili con carneen. Poissa on tylsä ja pistävä perus annuum-maku. Käytän yleensä Morugaa kuivattuna ja vain hyppysellisen, sillä haluan tästä chilistä esiin sen erityisen aromin, en niinkään poltetta (joka vie tajun). Riittoisaa tavaraa ja kiitollista kasvattaa.

Moruga Chocolate Cheesecake Tart

Löysin oheisen reseptin Taste:n sivuilta. Lisäsin siihen chiliä ja vähensin voin määrää.

150 g suklaacookieita
40 g - 60 g sulatettua voita
375 g maustamatonta tuorejuustoa
55 g sokeria
½ tl vaniljauutetta (käytin vaniljasokeria)
3 munaa
100 g sulatettua tummaa suklaata
ripaus kuivattua Moruga Scorpion -chiliä
  • Esilämmitä uuni 180 asteeseen. Voitele 13 cm x 36 cm kokoinen torttuvuoka. Laita keksit ja voi tehosekoittimeen ja sekoita kunnes seos muistuttaa märkää hiekkaa. Painele vuoan pohjaan ja reunoille ja esipaista 10-12 min, kunnes pohja on kiinteä. Anna jäähtyä.
  • Vatkaa tuorejuusto, sokeri ja vanilja tasaiseksi. Lisää yksi muna kerrallaan ja vatkaa tasaiseksi. Jaa massa kahteen osaan sekoita toiseen sula suklaa ja toiseen chilijauhe. Lusikoi massoja vuoronperään vuokaan. Tee lusikan kapealla päällä pyörteitä tortun pintaan. Paista vielä 20-25 min, kunnes juuri hyytynyt. Anna jäähtyä.

It's now proven that Moruga Scorpion can be used in baking as well as cooking. The aroma is really distinctive and exotic. The heat builds up gradually and doesn't attack you with a slap on the face like most annuum chiles do. It's nothing like the stingy annuum chiles. This one is definitely one of my favourites to grow! (Moruga is actually one of the hottest chiles in the world.)

I found this recipe from Taste and just added some dried Moruga.

150 g Arnott's Choc Ripple Biscuits (I used chocolate chip cookies)
60 g butter, melted (I used about 40 g)
375 g cream cheese
55 g (1/4 cup) caster sugar
1/2 teaspoon vanilla extract (I used vanilla sugar)
3 eggs
100 g dark chocolate, melted
pinch of dried Moruga Scorpion chile
  • Preheat oven to 180°C (160°C fan). Grease a 13cm x 36cm rectangular tart tin. Place the biscuits and melted butter in the bowl of a food processor and blend until the mixture resembles wet sand. Place the mixture in the tart tin and press firmly over the base and sides of the tin. Bake in the oven for 10-12 mins or until firm. Allow to cool completely.
  • Place the cream cheese, sugar and vanilla extract in the bowl of an electric mixer, beat until smooth. Add the eggs, one at a time, beating well between each addition. Divide the mixture into two equal amounts and add the melted chocolate to one portion and the chile to another. Spoon alternate amounts of the chocolate and vanilla mixture into the tart case and then, using the end of a spoon, swirl the two mixtures to create a 'ripple' effect. Bake for 20-25 minutes or until just set. Cool and serve.
