Sacherkakku / Sachertorte

Leivontafoorumilla on tässä kuussa haasteena leipoa jokin perinteinen englantilainen, espanjalainen tai itävaltalainen leivonnainen. Tarkoitus on etsiä jokin mahdollisimman autenttinen resepti ja noudatella sitä tarkkaan.

Suuri osa legendaaristen kakkujen resepteistä on tallessa jossakin kassakaapissa. Sacherkakku on tästä ehkä paras esimerkki. Hotel Sacher Wienissä omistaa alkuperäisen reseptin, eikä kai muita kakkuja saisi edes kutsua Sacher-nimellä.

Valitsin Sacherkakun oikeastaan siksi, että olen halunnut tehdä sitä jo kauan aikaa. Valitsin tämän mielestäni hyvän kuuloisen reseptin, koska valmistustekniikka kuulosti melko perinteiseltä ja kuorrutus ei ollut moderni ganache (kerma-suklaa), vaan vanhanaikainen sokeri-suklaakuorrutus. Kakku ei ole liian makea, mikä oli aika yllättävää

Vinkit!
  1. Kuorrutus: Jos et ole aiemmin tehnyt oheisella tavalla kuorrutusta, älä hätkähdä, kun suklaa muuttaa melko radikaalisti muotoaan aluksi. Kunhan vatkaat raivokkaasti, seos kyllä pehmenee ja muuttuu hyvin levitettäväksi. Alkuperäisessä ohjeessa ei ollut mainintaa, että kuorrutusta tulee vatkata voimakkaasti. Tämä on kuitenkin oleellista.
  2. Sokerilientä kannattaa keitellä alhaisella lämmöllä viitisen minuuttia, kunnes siirappi on n. 105-asteista (lanka-aste). Tämä auttaa suklaata jähmettymään hieman kovemmaksi. Älä kuitenkaan keitä sokerilientä liian kauan! Mieluummin liian vähän kuin liikaa.
Perinteisesti kakkupala tarjoillaan makeuttamattoman kermavaahdon kera.

Kakkupohja:
150 g (5.2 oz./ ¾ cup) voita
150 g (5.2 oz./ ¾ cup) sokeria
150 g (5.2 oz./ ¾ cup) suklaata, sulatettuna
8 munaa, valkuaiset ja keltuaiset erikseen
120 g (4.2 oz./ ¾ cup) vehnäjauhoja
voita+korppujauhoja
aprikoosihilloa


Kuorrutus:
150 g (5.2 oz.) suklaata
1 rkl öljyä
200 g (7 oz./ 1 cup) sokeria
1/8 l (½ cup) vettä



  1. Vatkaa voi, puolet sokerista ja suklaa. Lisää keltuaiset sekaan yksi kerrallaan, kunnes massa on paksua ja kuohkeaa. Sihtaa päälle jauhot.
  2. Vatkaa valkuaiset ja loppu sokeri kovaksi vaahdoksi ja kippaa jauhojen päälle. Kääntele varovaisesti sekaisin.
  3. Kaada voideltuun ja korppujauhotettuun kakkuvuokaan ja paista 180 asteessa n. 1 h. Jäähdyttääksesi kakun, käännä vuoka ylösalaisin ritilälle. Poista vuoasta n. 2 tunnin jälkeen (saatat haluta leikata pääliosan, jotta kakusta tulee tasainen) ja aseta lautaselle sileä kakkupohja päälimmäisenä. Levitä halkaistun kakkupohjan väliin ja kakun pintaan ohut kerros aprikoosihilloa ja kuorruta suklaakuorrutteella. Tarjoile kermavaahdon kera!
  4. Sulata suklaa ja sekoita sekaan öljy. Kiehauta sokeri ja vesi. Lisää jäähtynyttä sokerilientä lusikallinen kerrallaan sulatetun suklaan joukkoon, kunnes seos on tasainen.

This month's baking challenge at Leivontafoorumi is to bake something traditional from England, Spain or Austria. The idea is to try to find the most authentic recipe as possible and follow it closely.

Most of the authentic recipes are well-kept secrets. Sachertorte is perhaps the best example. Hotel Sacher in Vienna owns the original recipe and I guess you can't even call other cakes Sacher.

I chose Sachertorte basically because I've wanted to make it for a while now. I chose this particular recipe because the preparation technique sounded quite traditional and the icing was not a modern ganache (chocolate & cream) but the old-fashioned sugar chocolate icing. The cake is not too sweet, which was pretty surprising.

Tips!
  1. Icing: If you haven't done this kind of icing before, don't worry when the chocolate changes its shape quite radically when pouring the syrup in. As long as you beat vigorously, the mixture will gradually become smooth. In the original recipe, there was no mention that the icing should be beat really hard. However, it's really essential.
  2. You want to cook the sugar syrup over low heat for about 5 minutes until the syrup is about 105 degrees C (220 F) (single thread stage). This will result in a slighlty harder icing. However, do not cook the syrup for too long! Rather too little than too much.
For the Cake:
150 g (5.2 oz./ ¾ cup) butter
150 g (5.2 oz./ ¾ cup) sugar
150 g (5.2 oz./ ¾ cup) chocolate, melted in a double-boiler
8 eggs, separated
120 g (4.2 oz./ ¾ cup) flour
butter
dry bread crumbs
apricot jam


For the icing:
150 g (5.2 oz.) chocolate
1 tablespoon oil
200 g (7 oz./ 1 cup) sugar, divided (??)
1/8 litre (½ cup) water

  1. Beat the butter together with half of the sugar and the melted chocolate, adding the egg yolks one at a time, until thick and foamy. Sift the flour over the mixture.
  2. Beat together the egg whites and remaining sugar until stiff and mound on top of the flour. Fold everything together carefully.
  3. Pour the mixture into a springform pan that has been buttered and coated with bread crumbs and bake at 180°C (350°F) for about an hour. To cool the cake, turn it upside down onto a wire rack. After about 2 hours, remove it from the pan (you may want to cut the top side to make it level) and place it on a platter with the smooth torte base on top. Spread in between two cake discs and on thetop and sides with a very thin layer of apricot jam and glaze with a chocolate icing. For a special treat, serve the Sacher Torte with whipped cream! 
  4. Melt the chocolate in bain-marie or double boiler and stir in the oil. Bring the sugar and water to a boil. A spoonful at a time, stir the cooled sugar solution into the melted chocolate until you have a smooth mixture.
